Meatless Monday

Here is another cool recipe for Meatless Monday

Asian Veggie Stir-Fry Recipe
















INGREDIENTS

MorningStar Farms® Garden Veggie Patties™
2 teaspoons chicken bouillon granules
1/4 cup hot water
1 package (16 oz.) frozen stir-fry blend mixed vegetables
1 teaspoon vegetable oil
3 cups cooked egg noodles
1 teaspoon lemon pepper seasoning
2 tablespoons parsley flakes
1/2 cup shredded Parmesan cheese

DIRECTIONS

1. Prepare MORNINGSTAR FARMS GARDEN VEGGIE PATTIES acording to package directions and cut into 1/2-inch strips. Set aside. Combine bouillon and hot water. Set aside.

2. In wok or 12-inch frypan, heat oil. Add mixed vegetables and MORNINGSTAR FARMS GARDEN VEGGIE PATTIES. Stir-fry about 5 minutes or until vegetables are hot. Stir in broth, noodles, and lemon pepper. Continue to stir-fry about 3 minutes longer or until noodles are hot. Remove from heat and toss with parsley flakes and cheese. Serve hot.

Morning Star Farms and a Recipe

Thanks to MorningStar Farms and bzzAgent, I was given the opportunity to try MorningStar Farms Veggie Burgers! I recently received the coupons in the mail and I'm going to go pick some up soon. In the meantime, here is a great recipe that I found on the Morning Star Farms website that would be perfect for anyone participating in Meatless Monday!



Texas Old West Burger


INGREDIENTS

2 1/2-inch-thick slices French Bread (about 2 oz. total)
1/2 teaspoon vegetable oil
3/4 cup sliced sweet onion
1/4 teaspoon bottled minced garlic
MorningStar Farms® Grillers® Original
1/8 teaspoon pepper
2 tablespoons chopped tomato
1 tablespoon fat-free ranch salad dressing



DIRECTIONS

1. In large nonstick skillet coated with cooking spray, cook bread over medium-high heat for 2 to 3 minutes or until lightly toasted, turning once. Remove from skillet. Set aside.

2. Add oil to same skillet. Brush oil over skillet bottom. Add onion. Cook, covered, over medium-low heat for 15 to 18 minutes or until onion is very tender, stirring occasionally. Stir in garlic. Cook over medium heat, covered, for 4 to 6 minutes or until onion begins to brown, stirring occasionally. Remove from heat.

3. Meanwhile, cook MORNINGSTAR FARMS GRILLERS ORIGINAL veggie burger according to package directions.

3. Top one slice of toast with burger. Sprinkle with pepper. Add onion mixture, tomato, salad dressing and remaining toast.
